One of our employees will occasionally have to prepare fresh food (sandwiches) for meetings, training sessions, etc. She hasn?t had any food hygiene training ? is this a problem?

Under the current Food Safety legislation she would fall within the definition of a food handlers as she 'handles packaged or unpackaged food, food equipment, utensils and food contact surfaces'. This means she would need to have some basic food hygiene training 'comensurate with her activities'. The easy option is to send her on a basic food hygiene course run by a local providor or alternatively you could run your own course in house provided it covered the areas within the basic food hygiene course. You can get copies of the sylabus for these courses from the web from the Chartered Institute of Environmental Health (www.cieh.org) or the Royal Institiute of Public Health (www.riph.org.uk)
